Jerry Cannon is finding innovative answers to help improve our food system as a Hormel Foods Corporation research scientist.
“It’s a great job with a great company in a great industry,” Cannon said.
Cannon oversees fresh pork research in Austin, Minn. His duties vary, but each day is interesting, he said.
“My duties include evaluating many factors that influence the quality, sensory and shelf-life attributes of fresh pork and the raw pork material that eventually becomes one of many Hormel branded products,” he said. “I assist in evaluating animal handling processes and protocol. I evaluate factors such as hog genetics, nutrition, chilling procedures and packaging technology.”
Cannon achieved his personal and career goals with a degree in animal science from the University of Illinois.
“My degree provided the knowledge of animal and meat science necessary to complete tasks. I learned about these topics from some of the best professors in the world,” he said.
In addition to a quality education, Cannon received job security with his U of I degree.
“No matter what’s happening with the economy, everyone has to eat. There will always be opportunities in the animal science and food industries,” he said.
